Chunky Peach Salsa on Crostini

Ingredients

  • 2 medium peaches, peeled and chopped
  • 1 tbsp fresh lemon juice
  • 2 medium tomatoes, peeled, seeded, and chopped
  • 4 scallions, chopped
  • 1 tbsp chopped jalapeno
  • 1 tbsp chopped cilantro
  • 1/4 cup Cilantro & Roasted Onion olive oil
  • 3 tbsp Peach white balsamic vinegar
  • 2 tbsp honey

Directions

  1. Toss the peaches with the lemon juice in a bowl.
  2. Add the tomatoes, scallions, jalapeno, and cilantro. Mix well.
  3. Whisk the olive oil, vinegar, and honey in a small bowl. Add to the peach mixture and toss to mix.
  4. Serve on a toasted crostini.
