Panzanella Italian Bread Salad

  • 1.5 lb day old artisan bread, large diced
  • 1/2 red onion, julienne
  • 1 cucumber, peeled, seeded, and sliced
  • 1 ripe tomato, large diced
  • 1 tbsp capers
  • 1/4 cup Kalamata olives, pitted
  • 1/2 tsp dry oregano
  • 2 tbsp fresh basil, chiffonade
  • 2 tbspn Italian parsley, julienne
  • 8 oz. fresh mozzarella, diced
  • 2 oz. balsamic vinegar (your favorite flavor)
  • 6 oz. extra virgin olive oil
  • 2 cloves garlic, minced
  • 1 pinch of cayenne

Directions

Add all ingredients together in a large bowl and toss gently until evenly coated with oil and vinegar. Enjoy!
