- 1.5 lb day old artisan bread, large diced
- 1/2 red onion, julienne
- 1 cucumber, peeled, seeded, and sliced
- 1 ripe tomato, large diced
- 1 tbsp capers
- 1/4 cup Kalamata olives, pitted
- 1/2 tsp dry oregano
- 2 tbsp fresh basil, chiffonade
- 2 tbspn Italian parsley, julienne
- 8 oz. fresh mozzarella, diced
- 2 oz. balsamic vinegar (your favorite flavor)
- 6 oz. extra virgin olive oil
- 2 cloves garlic, minced
- 1 pinch of cayenne
Directions
Add all ingredients together in a large bowl and toss gently until evenly coated with oil and vinegar. Enjoy!
