- 3 lbs russet potatoes
- 1/3 jar Terrapin Ridge Farms Dill Pickle Mustard
- 2 green bell peppers, diced
- 3 stalks of celery, diced
- 1/2 cup mayonnaise
- Optional: Chopped Onions
- In a large pot, boil potatoes until they are tender (around 30 minutes). Drain and peel.
- Cut into around 1-2 inch chunks.
- In a different bowl, combine potatoes, Terrapin Ridge Dill Pickle Mustard, green bell peppers, 3 stalks of celery, mayo, and chopped onions.
- Cool completely and then serve.
